The Natural Salt is removed from the earth as a brine and dried by a solar evaporation process; it contains no heavy metals, such as arsenic, lead, or mercury.
The rare Natural Sea Salt generation procedure is organic, and keeps waste to a minimum; the liquid Nigari, a by-product of the salt making process has no additives. Nigari is used for making tofu and fresh cheese. The minerals found in the Nigari are calcium, magnesium, and potassium.
